Recipe #11: Coconut Cake

  • 1 box of white cake mix
  • 3 large eggs
  • 1/3 cup veggie oil
  • 1 cup water
  • 1 can of sweetened condensed milk
  • 1 can of cream of coconut (I use Goya brand!)
  • 1 bag of shredded coconut
  • 1 tub of cool whip


1. Follow directions on cake mix box (white cake mix in a 9×13)

2. Poke holes with a skewer in cake right out of the oven while its hot

3. Mix together condensed milk and cream of coconut

4. Pour mixture over cake while still warm

5. Let soak overnight in the fridge

6. Frost with cool whip and cover in coconut shreds
